This light, but filling muffin has been a favorite in my home for years. It is just as good once I replaced the sour cream with plain greek yogurt. The family doesn't even know the difference. Ingredients

Margarine, 1/2 Cup
Brown Sugar, 1/4 Cup
Egg, 1 large
Plain Greek Yogurt, 1 Cup
Molasses, 2 Tbsp
Raisins, 1/2 Cup (optional)
Flour; WW, 1 Cup
Wheat Bran, 1 Cup
Salt, 1/4 tsp
Baking Soda, 1 tsp
Tips
If the yogurt is very thick, stir it to break it up a little before adding to the mixture. If you wish, substitute the yogurt for sour cream. You can add walnuts for an extra crunch.
Directions
Preheat oven to 400*
Beat/mix margarine, sugar and egg till fluffy and creamy. Add yogurt, raisins and molasses, fold in. Seperately mix dry ingredients. Add to yogurt mixture, fold in until all is moist. It will be lumpy. Spoon into prepared muffin pan. Bake 10 - 15 min until golden on top and toothpick inserted comes out clean.
Serving Size: Makes 12 regular size muffins.
