Introduction

Ingredients

    Salad:
    Ground Chicken, Old El Paso taco seasoning (1/2 packet), olive oil, tomatoes, low fat sour cream, carrots, lime.

    Salsa:
    I prefer homemade salsa. I typically combine diced tomatoes and diced onions, lime juice, jalapeno or other pepper, and cilantro. Refrigerate for 2 hours before serving.


Directions

Finely chop the onion and saute in oil. Add ground chicken. When cooked through, remove from heat and add taco seasoning and fresh lime juice.

Chop lettuce, slice carrots, and cut tomatoes in wedges.

Combine all ingredients over the bed of lettuce and serve with fresh salsa on top and a dollop of sour cream (optional).

Serving Size: Makes 4-5 servings
