    Harris Teeter Spicy Jalapeņo Chicken Sausage, 5 links, sliced
    Bush's, Black Beans, 6 cup
    Onions, raw, 2 cup, chopped
    Carrots, raw, 1 cup, chopped
    Chicken Broth, 4 cup (8 fl oz)
    Cilantro, raw, 1 large bunch chopped
    *Cumin seed, 1 tbsp


could be served with a dollop of light sour cream; I'm also serving with a side of butternut squash for balance, and some crusty bread.


Saute onion with chicken sausage and carrots until browning. Add cumin and garlic, if desired, and stir to coat. Add black beans and broth, bring almost to a boil and then simmer for as long as you care to (but at least 30 minutes. Add chopped cilantro while simmering and cook at least 10 more minutes. Very satisfying soup!
