Ingredients

    * Garlic, 2 cloves
    * Spinach, fresh, 1 cup chopped
    * Cuban Style Black Beans (Trader Joe's), 1 can
    * Field Roast Company Smoked Apple Sage, 1 "sausage"
    * Salsa Autentica (Trader Joe's), 4 tbsp, to top

    If you're not familiar with Field Roast Co "sausages," they are a treat. The nutritional information is really for one "sausage," not one serving. Each sausage is 240 cal, 10g fat, 26g protein. They're yummy, vegan, soy free, and can be found at Whole Foods and other retailers. Cuban black beans are just black beans with some green peppers, onion, garlic, salt, red wine vinegar, and spices (but already prepped, so open the can and go - available from Trader Joe's and probably other retailers).

Directions

Chop up the spinach, garlic, and field roast. Rinse the beans. Warm up the beans and "sausage" first, then add garlic, and finally the spinach in a pan. Cook until the spinach is blended with the dish. Serve warm, topped with salsa or a little hot sauce if you like.

Serving Size: Makes two to three servings.
