    3 servings Mini Pasta Shells
    1 1/2 cups Tomato Sauce, no salt added
    1/2 cup Red Pepper, diced
    1/2 cup Green Pepper, diced
    1/2 cup Onion, diced
    2 Garlic cloves, minced
    1 Tbsp Basil
    1 tsp Oregano
    1 tsp Cumin
    1 cup Spinach, chopped


Sometimes I add veggie crumbles or edamame to up the protein content. Sometimes I sprinkle vegan parmesan on top.


1. Cook pasta shells according to package instructions.
2. Dice red and green bell peppers. Dice onions. Chop spinach. Mince garlic.
3. Add tomato sauce, peppers, onion, garlic and herbs to a saucepan. Cook until peppers are tender yet crisp.
4. Remove from heat. Combine pasta, sauce mixture and spinach.

Serving Size: Makes 3 1-cup servings
