Ingredients
-
7 cup Hunts 100% natural Diced Tomatoes
210 oz Contadina Tomato Sauce
lean Hamburger, 48 oz
6-8 cup Dried Dark Red Kidney Beans
2/3 Cup Chili powder
2 tbsp Cayenne Pepper
1.5 cup, chopped Onions, raw
1 tsp. Cumin Powder
Directions
You want to reconstitute the beans by soaking them for 6-8 hours in a large stock pot (12 quarts). Then bring them to a boil and cook them for about an hour. DO NOT ADD SALT! They will stay hard if you do. Once the beans are desired tenderness, Strain them and rinse them. It will reduce the bean after affect. :) Set aside for a moment.
In the same pot, now rinsed, throw in the diced onion for about 5-7 minutes on med heat. Then add hamburger. Add a couple TBSP of salt. Mix and brown until meat is fully cooked.
Remove and drain the meat. Set aside with beans.
In pot, add sauce, tomatoes and seasonings. Bring to a gentle boil on med-hi. Once heated, reduce temperature to low; add beans and meat back in. You can serve in as little as 10 minutes or let it simmer, stirring occasionally up to an hour or so. I then sort it into containers and freeze some for easy meals later on.
