Introduction

A very tasty chicken quesidilla recipe from my daughter's alternative school A very tasty chicken quesidilla recipe from my daughter's alternative school
Number of Servings: 10

Ingredients

    1 LB Boneless, Skinless Chicken Breast
    1 Clove Garlic
    1 Small Onion
    1/2 block of Cabot Extra Sharp Cheddar Cheese
    4-5 leaves of fresh Kale
    Balsalmic Vinagarette
    Whole Wheat Tortilla

Tips

Cabot cheese can be replaced with a less expensive brand or even pre-shredded cheddar cheese

If not in season, kale can be replaced with lead spinach or lettuce


Directions

In a latge skillet:
dice garlic and onion and saute
add chicken--cut to 1/2 inch cubes
cut cheese into 1 inch or less blocks and add to skillet
add diced kale
cook until both chicken is done and cheese is totally melted

Place mixture into warmed tortilla shell, wrap and enjoy!

Serving Size: makes 10 8-inch wraps
