Ingredients

    600g floury potato cut into chunks
    1 tbsp low fat spread
    1 tsp wholegrain mustard
    300g cooked gammon cut into chunks
    2 hard boiled eggs chopped
    30g low fat cheddar
    steamed broccoli and carrots to serve

    for the sauce
    1 tbsp plain flour
    2 tsp low fat spread
    300ml skimmed milk
    50g low fat cheddar
    2 tsp wholegrain mustard
    2 tbsp chopped fresh curly parsley

Tips

this bacon and egg pie is very filling.


Directions

cook the potato for 10-15 mins or until soft,then mash with the low fat spread and mustard,season to taste.meanwhile,preheat the oven to gas mark 5/190c place the gammon in a medium pie dish and top with the egg.for the sauce,put the flour,low fat spread and milkin a small pan and bring to the boil whisking constantly,turn the heat down and cook for another 5 mins,stirring often,then remove from the heat and stir in the cheese mustard and parsley,season to taste then pour over the ham and eggs. spoon the mash over the top and scatter the cheese over,bake for 30 mins until golden and bubbling,serve with the steamed vegetables.
