Ingredients

    1 cup almonds
    1/2 cup raisins or dried Cranberries
    1/2 cup apricots
    1/2 cup oatmeal
    1/4 cup unsweetened coconut
    2 TBSP (Heaping) Almond butter or Peanut Butter
    1 tsp cinnamon
    1/2 tsp vanilla extract or rum extract (optional)

Tips

To release extra nutrients you could soak the almonds over night. You may have to play with amount of almond butter to make it easier to form the cookie balls.


Directions

Place all ingredients in food processor and process till well blended so that you can easily take contents in hands and form tight cookie balls.

Serving Size: Makes around 28 Medium cookie balls
