Introduction

Our family version of tuna casserole since the early 1950's: no noodles, mushroom soup, peas, cheese OR potato chips. This was tuna casserole for me before I heard Garrison Keillor's song! Ingredients

    12 ounces water-packed tuna
    1 T. lemon juice
    1 cup crushed saltine crackers
    1.5 cups skim milk
    1 T. butter
    2 T. flour
    1 large egg, beaten
    1/2 c. celery


Tips

You can add bit of onion and cheese if you want. I seldom do, but it's good that way. I also like leftovers cold! Really!


Directions

Add lemon juice to tuna. In a glass bowl in a microwave oven, heat milk, flour, and butter in until slightly thickened. Stir into tuna, together with the egg and celery. Bake in a greased baking dish at 350 degrees about 30 minutes.
