Ingredients

1.5 Cups uncooked rice
nonstick spray
1 tsp olive oil
1 cup chopped onion, purple onion is great!
1 garlic clove, minced
.5 Cup chopped celery
1 lb lean ground turkey
2 teaspoon minced jalepeno
1 Cup salsa
1 Cup water
1 15-oz can black beans
4 oz cheddar cheese, grated
Directions
Preheat oven to 350 degrees.
Cook rice according to package directions. Spray 3 quart baking dish and set aside.
Heat oil in a nonstick pot and saute' onions until soft. Add garlic, celery, jalepeno, and meat. Cook until meat is done. Add beans, cumin, chili powder, salsa and water. Cook until blended together.
Spread half of the rice in baking dish. Cover with meat mixture. Cover meat mixture with balance of rice. Top with grated cheese. Bake in 350-degree oven for 20 minutes.
