I do mix vegetable here, so if you are a strict Simeons follower, this wont work for you. Instead, use 1 tbsp celery powder and 1 tbsp dried minced onions!

Number of Servings: 2

Ingredients

    7 oz lean ground veal (Can substitue ground beef)
    3 medium celery stalks, chopped
    1/2 small onion, chopped
    1 can POMI crushed tomatoes (15 oz)
    1/2 c sugar free, low sodium broth (Check label)
    1 tbsp white vinegar
    1 tbsp red pepper flakes (adjust to your taste)


Directions

crumble veal in nonstick saute pan, add celery and onions and cook over medium heat until meat is browned thoroughly.

Stir in tomatoes, broth, vinegar and pepper flakes. Reduce heat and simmer 1 hour. (In a hurry, can simmer for as little as 15)

I serve this over a bed of miracle noodles. Buon appetito
