This is an easy recipe to make at home. I make it when I don't want to cook a meal but want something with protein in it. It does have a little bit of calories in it for the one serving but you can share with a friend to make it less. This is an easy recipe to make at home. Ingredients

1 cup of cannelinni beans or pinto beans
1 tbsp of scallions
1 roma tomato or small tomato
1 tsp of cilantro or basil
6 medium slices of italian bread
Tips
This can be made several ways but is a great way to have protein and carbs all in one!
Directions
Preheat oven to 350.
Warm up cannelinni beans on stove top or in microwave.
Cut tomatoes and scallions and cilantro or basil. (If you want the tomatoes to be extra juicy you can cut them up and leave them for a little while to sit)
Place cut bread on pan and place in oven for 3-5 minutes then mush cannelinni beans on top of the bread and place back into the oven for 5 minutes or you can broil the topping to make it crispier.
Place cut up tomato mixture on top of bread. And voila!
Serving Size: Makes 6 pieces of bread with beans and tomato topping.
