Ingredients

    4 Med. Potatoes, boiled until soft enought to mash (no salt added)
    Soft Goat Cheese 8oz
    1 med onion, chopped finely
    2 sheets of reay made frozen puff pastry

Tips

Can be frozen once cooked and reheated in the toaster oven/microwave or oven
Calories could be lowered by switching out cheese, but my kids have allergies and this is not an option for us


Directions

Mash precooked Potatoes until smooth, mix in creamy goat cheese and onion.

Roll out thawed puff pastry and cut each sheet into four equal pieces ((+) in half and half again other way)

Devide mash filling between the eight square and fold in half to form a triangle. Use egg wash to seal edges and brush across top of each pasty.
Cook at 400F for 15-20 minutes or until golden brown
Eat by themselves or with a side salad/favorite veg.

Serving Size: makes 8 pasties (1 pasty = 1 serving)
