Introduction

These are a great granola bars, chewy yet crunchy. I wanted to remove the wheat, so I replaced it with the almond flour, flaxseed and coconut flour. For a simpler recipe, use 1 cup whole wheat flour. Ingredients

    2 C quick cooking oats
    1/2 C packed dark brown sugar
    1 C almond flour
    2 Tbs flaxseed meal
    2 Tbs coconut flour
    2 tsp cinnamon
    1/2 tsp salt
    1/2 C raisins
    1/2 C finely chopped dried apples
    1/2 C chopped walnuts
    1/3 C maple Syrup
    1 egg
    1/2 C vegetable oil
    1 Tbs vanilla extract

Directions

Preheat oven to 350 degrees. line a 9x13 pan with nonstick foil.

In a large bowl mix: oats, brown sugar, almond flour, flaxseed, coconut flour, cinnamon and salt.
Add raisins, apples and nuts.
In a seperate bowl whisk maple syrup, egg, oil and vanilla. Pour maple syrup mixture into oat mixture and combine well, using hands.
Press mixture into lined pan and bake until brown aroudn the edges about 25-30 minutes. Cut bars while warm but let cool before removing from pan.
