Ingredients

    Irish Beef Silverside Joint, 2484 gram(s)
    Plain white flour (UK), 16 g
    Olive Oil, 2 tbsp
    Red Wine, 250 mL
    Schwartz Dried Basil, 1 tbsp
    Marjoram, dried, 1 tsp
    Dried Thyme, 1 tsp
    Salt, 2 tsp
    Black Pepper (Ground), 0.5 tsp
    onion, chopped or sliced, 180 gram(s)
    Red Potato, 600 grams
    Carrots, raw, 6 medium
    Shallots, 300 gram(s)
    Garlic, Whole Head, 2 serving
    Beef stock, home-prepared, 250 grams

Directions

1.Preheat an oven to 180 C / Gas 4.

2.Sprinkle the roast evenly with the flour and set aside. Heat the oil in an oven-proof casserole with lid over medium-high heat. Brown the roast on all sides, about 10 minutes total; remove from the heat. Pour in the water and wine. Sprinkle with the basil, marjoram, thyme, salt and pepper. Arrange the onion slices on the roast.

3.Replace the cover and bake in the preheated oven for 3 hours. Add the potatoes, carrots and shallots. Pour in additional water if the roast looks dry. Continue baking covered until the roast pulls apart easily with a fork, about 1 hour longer.
