Introduction
This is one of the best Vegetarian food that I grew up eating. My mom's delicious masala Kidney beans. Eat it with roti/phulka and its delicious. Ingredients

Dark Red Kidney Bean 20 oz can 3
Canola Oil 1 cup
Salt 11/2 tsp
Chilli Powder 2 tsp
Coriander Powder 1/2 tsp
Cumin Powder 1/4 tsp
Tomatoes/ tomato paste 4-5 chopped/9 oz
Thinly Sliced Onions 4-5 medium
Garlic paste 1 1/2 tsp
Ginger Paste 1/2 tsp
Tips
Onion cook faster when covered, same goes for tomatoes ( salt and chilli would cook tomatoes even faster, you can add more water to the tomatoes to cook so it wouldn't burn)
Directions
Heat oil in a pot
Add onions and fry them brown, then add ginger garlic paste and saute it for 20 - 30 seconds
Now add the tomatoes, red chilli powder, salt, cumin and coriander powder and cover and cook it very well ( so well, that it almost becomes like a runny paste)
Then add the Kidney Beans along with the juices and cook for another 10 to 15 minutes till the water dries up and your Kidney Beans look like what you see in the photo.
Serve with Hot Naan/Chapati/Roti or Phulka
