Ingredients

    1 box of Reduced Fat Ritz Crackers
    2 sticks of butter (I use Brummel & Brown equivalent)
    1/4 cup of Splenda
    2 small boxes of SF French Vanilla pudding
    1/2 gallon of SF French Vanilla ice cream
    1 8 oz tub SF Cool Whip

Directions

Melt the butter. Add 3 sleeves of crumbled ritz crackers and 1/4 cup of Splenda. Mix well and then place in the bottom of a regular cake pan. Keep 1/4 cup crumbs to garnish the top. Let ice cream sit out in a bowl to soften (not melted, just slightly softened). When the ice cream has softened, add the two boxes of French Vanilla pudding mix to ice cream. Add in a little more than half of the cool whip to the ice cream/pudding mixture. Mix well until smooth and then place on top of your ritz crust. Just add the remianing cool whip over the top and garnish with the remaining crumbs. Refrigerate at once (do not freeze).
