Ingredients
-
1.5 cups Lettuce Mixture
1 plum tomato (diced)
1 T. Sunflower Seeds or Salad Topping
3 oz. Southwest Chicken Breast Strips
2 T. Low-Fat Shredded Cheese
2 T. Light Ranch Salad Dressing
Dash Cumin
Directions
Makes 1 serving (or you can cut it in half for 2)
Note: You can use any brand chicken breast strips that are precooked and not breaded. They were all around the same nutritional values.
Cook the chicken strips in the microwave for 2 minutes (I found that the time on the packaging was too long). Spread lettuce on a plate. Top with diced fresh tomato, salad topping or seeds, cooked chicken strips (cooled or warm), and cheese. Mix dash of cumin with 2 tablespoons of dressing. Add dressing to salad and mix.
You can also add tortilla strips or chips, but that has not been calculated into the nutritional info.
Enjoy!
