Ingredients

    2 green onions
    3 eggs
    2 T. flour
    2 cups cooked quinoa
    3/4 c. shredded cheese of your choice
    1/2 c. lowfat cottage cheese
    pepper
    cumin
    salt
    garlic

Tips

This is great anytime and a quick filling snack. I love fried eggs on it for breakfast with hot sauce.
Makes a lot of servings and keeps well as a mix in the fridge.
