Introduction

Ingredients

    1 cup quinoa- cooked and cooled
    1 19 oz can of black beans drained and rinsed
    2 large ripe avocados
    1 cup pumpkin seeds (pepitas), toasted
    1 bunch thinly sliced green onions
    1/2 cup coarsely chopped cilantro
    1 cup thinly sliced celery
    1 can of black olives- drained and rinsed
    pinch of salt and freshly ground black pepper

    VINAIGRETTE
    1/3 cup olive oil
    1/4 cup lime juice
    2 garlic cloves-minced
    1 tablespoon honey
    2 tablespoons Dijon type mustard
    pinch of salt and freshly ground black pepper

Tips

Keeps well in the refrigerator. Sometines I add garbanzo beans, red, green, and rellow bell peppers, cucumber, jicama, or whater fresh vegetables I have on hand.


Directions

1. Cook quinoa according to package directions and let cool.
2. Combined cooled quinoa and remaining ingredients. Drizzle with Vinaigrette and toss gently to combine.
