Ingredients

    Small onion (diced)
    1 stick of celery (sliced thinly)
    3 cloves of garlic (crushed)
    Small box of raisins
    2 tbsp dessicated coconut
    oxo vegetable stock cube
    2tbsp hot curry powder
    .25 can of chopped tomatoes
    a little water to keep the mixture moist
    1 cup of cooked brown rice

Directions

Soften the onion and celery in a pan, add garlic. Add the rest of the ingredients except the rice. Allow to heat through for 5-10 minutes. Stir in rice. Ensure thoroughly heated through before serving.
