2/3 cup coconut flour
1/2 cup butter (1 stick), melted
8 eggs
1/2 tsp salt
1/2 tsp baking powder
1/2 pkg Hidden Valley Ranch (HVR) Fiesta Ranch dip mix
1.5 oz shredded Cheddar cheese
Tips
I would have added more cheese, but I was at the bottom of the bag. The Hidden Valley Fiesta Ranch dip adds about half a carb per muffin. If you want them to be lower carb, you could use fajita seasoning instead.
Directions
Mix dry ingredients; add shredded cheese.
Melt butter; add eggs and blend well.
Pour egg mixture into dry ingredients and mix well.
Spoon mixture into prepared (greased) muffin pan.
Bake for 25 minutes or until golden brown.
Serving Size: makes 12 muffins at 2.8 nC each
