Introduction

A light jellied salad. A light jellied salad.
Number of Servings: 8

Ingredients

    1 package Sugar-free lime-flavored gelatin
    1 cup Water, boiling
    1/4 teaspoon Salt
    1 cup Pineapple, (canned) crushed with juice
    1 cup Cottage cheese
    1/2 cup Celery, chopped
    1/2 cup Carrot, grated

Tips

The original Colleen Salad doesn't have celery or carrots, but it's an easy (and tasty!) way to eat more vegetables.


Directions

Mix gelatin, water, and salt together. Stir to dissolve. Stir in pineapple with juice. Chill until syrupy.
Fold cottage cheese, celery, and carrot into thickened mixture. Pour into mold or bowl. Chill until set.
