Introduction

Ingredients

    1/2 pound French sorrel leaves
    1/2 medium sweet onion, thinly sliced
    4 oz. cheddar or other cheese, grated
    1/2 cup finely diced ham
    4 eggs, beaten
    1 1/4 cups evaporated milk or half and half
    1 Frozen 9" deep dish pie crust
    1 Tbsp. olive oil

Directions

Wash the sorrel; Cut off stems and central vein, then coarsely chop. Heat a skillet to medium heat; put in the olive oil to coat the bottom of the pan. Saute onions, then add sorrel and saute until sorrel becomes limp. Remove from pan and drain in a colander.

Evenly place grated cheese in the bottom of uncooked pie crust. Sprinkle the diced ham evenly over the cheese. Place the sorrel onion mixture evenly over the ham and cheese. Mix together the beaten egg and milk; pour it into the pie pan. Place in a preheated 375° F oven and bake for 30-35 minutes, or until a knife inserted in the center comes out clean.
