    1/2 Tablespoon granular sugar substitute (sucralose)
    1/2 Teaspoon ground cinnamon
    1/4 Tablespoon baking powder
    1/8 Teaspoon baking soda
    1 Tablespoon buttermilk
    3/4 large egg
    3/4 Tablespoon sugar-free vanilla syrup
    1/8 Cup cold water
    1/4 Cup soy flour
    1 1/2 Tablespoons or 1/3 cup unsalted butter, melted
    1/4 oil spray for greasing waffle iron


1. Heat waffle iron per manufacturers instructions.

2. Whisk together soya mix, sugar substitute, cinnamon, baking powder and baking soda. Add buttermilk, butter, eggs and syrup and stir until well blended (batter will be stiff).

3. Add cold water 1 tablespoon at a time until batter is easily spoonable and spreadable, about the consistency of a thick pancake batter.

4. Spray waffle iron with oil spray. Place approximately 3 tablespoons of batter in center of a waffle iron.

5. Cook according to manufacturer's instructions until crisp and dark golden brown.

6. Repeat with remaining batter. Serve warm. Enjoy!
