Ingredients

1 1/2 pounds Lean Ground Beef
3/4 cup yellow onion, chopped
3/4 cup unpeeled carrot, grated
3/4 cup mushrooms, chopped
3/4 cup green pepper, chopped
1 egg
salt & pepper to taste
Directions
Pre-heat oven to 375 degrees. This should bake about 1 hour.
Mix all ingredients thoroughly. Put into loaf pan. Set loaf pan into baking dish to catch any juices that might spill over during cooking. Let rest 10 minutes before slicing. Remove from pan and slice into 8 slices.
I use a baster to remove the grease the last 10 minutes of cooking time. The time is an estimate as I use a cooking probe that I insert and set to 155 degrees.
This recipe yields a very heavy, flavorful, moist meatloaf with very few carbs!
I created this recipe several years ago because I did not like the extra carbs and sodium that come from crackers, oatmeal or rice, the normal 'fillers' for meatloaf. I found fillers are not required.
