Ingredients

    I sat down with the manager of the local Chuy's and she gave me the portion sizes.

    Fajita meat--4 oz chopped chicken, 4 oz chopped beef
    Pico de gallo (onion-red and white, tomato, cilantro, jalapeno)--1/4 cup
    Guacamole (with cilantro, tomatoes, and onion)--1/2 cup
    Shredded cheese--1/2 cup
    Shredded lettuce--1/2 cup

Tips

When I'm eating at a Mexican food restaurant, I always ask for a small plate of lettuce to go with my salsa (or Creamy Jalapeno at Chuy's). I no longer miss the tortilla chips; I have come to prefer lettuce instead of chips.


Directions

Using pre-prepared ingredients, the Chuy's chef layered the ingredients in the following order: meat, cheese, jalapenos. Then he heated the plate until the cheese melted. Next, he added the lettuce, the guacamole, and sprinkled the pico de gallo over the whole plate.
