Ingredients

    1 pound sweet potatoes, peeled and cut into 1/2 inch pieces
    1 pound lean pork loin, cut into 1 inch pieces
    14 1/2 ounce can diced tomatoes with green chilis
    1 medium garlic clove minced
    1/4 cup orange juice
    2 medium scallions chopped (green parts only)
    1/2 tsp table salt
    1/4 tsp ground cumin
    1/4 tsp black pepper
    1 1/2 tbsp fresh lime juice
    2 tbsp cilantro, fresh, chopped

Directions

Place sweet potatos, pork, tomatoes, garlic, orange juice, scallions, salt, cumin & pepper in a 4 to 5 quart slow cooker; cover and cook on low for 7 hours. Just before serving stir in lime juice and cilantro, cover and cook for 5 minutes more.

    Very Good
    Skipped the green onions (forgot to buy them) I didn't dice the pork I just put the piece of pork over the potatoes. It was very tasty. Easily pulls apart. I added the lime juice with the other ingredients. Very easy to make and tastes great! - 1/13/13
