Introduction

Ingredients

    2 cups GF flour mix (I used 1c white rice flour, 2/3 cup potato flour, and 1/3 cup tapioca flour)
    1 tbs ground flax seed
    1 tbs GF baking powder
    1 tsp sea salt
    2 eggs
    1 1/3 c water
    2 tbs vegetable oil
    1 tbs honey or agave nectar

Tips

I made this in my toaster oven, and found that it was done after closer to 45 minutes, but you may need the full cooking time in a regular oven.


Directions

1. Preheat oven to 350
2. Spray 8x4" loaf pan with cooking spray
3. Combine flour, flax, baking powder, and salt. Mix until combined.
4. Combine eggs, water, oil, and honey in a bowl. Add to dry ingredients
5. Mix until well combined.
6. Pour batter into prepared pan and bake for 55-60 minutes. Loaf should be golden on top and dry in center.

Serving Size: Makes 21 1/4" thick slices
