Ingredients

    8oz frozen okra
    8oz frozen lima beans
    8oz frozen corn
    1 14.5oz can diced (or petite diced) tomatoes (undrained)
    1 small sweet onion
    3 oz salt pork, rinsed and diced
    water

Tips

This is easily made into a vegetarian meal by omitting the salt pork, although I would recommend adding some salt to the dish if you omit the pork.
This also drastically reduces the fat in the dish.
This is an excellent side dish or main course.
Also, I tend to like my vegetables a little mushy so you may want to reduce cooking time if you like your veggies firm.


Directions

-Place okra, lima beans, corn, and tomatoes in soup pan. Fill tomato can with water, use water to just cover vegetables.
-In a separate pan, begin to cook salt pork and onions. Cook until onions are just transparent, do not brown onions.
-Combine salt pork and onions into soup pan. Bring to soft boil.
-Cover and simmer for one hour stirring occassionally, or until vegetables are to desired doneness.
