Introduction

this is a delicious light lunch or first course for a dinner party that I got from epicurious. I prefer balsamic vinegar to red wine vinegar in the original recipe however you're welcome to try it. I also used the clementines because they are easy to peel and segment. Ingredients

    4 cups of green beans, with the ends trimmed
    1 cup of pitted green olives
    5 clementines, peeled, pith removed and segmented (or 4 oranges, just make sure to slice them in half)
    2 tbsp honey
    2 tbsp extra virgin olive oil
    3 tbsp balsamic vinegar
    salt and pepper to taste




Tips

This salad tastes best at room temperature and can be made ahead.


Directions

mix the honey, vinegar, olive oil and black pepper together and set aside.

boil green beans in salted water for 3 minutes, then drain and rinse with cold water. toss remaining ingredients together with dressing.

Serving Size: makes 4-5 side servings.
