Ingredients

8 oz. Salmon Filet
1/2 cup cooked brown rice
1 Medium Red Tomato (sliced)
2 Button Mushrooms (sliced)
1 Medium Zucchini (sliced)
1/4 Whole Onion (sliced)
2 Lemon Wedges
1 tbsp Extra Virgin Olive Oil
1 tbsp McCormick Salmon Rub
1 tbsp McCormick Perfect Pinch Vegetable Seasoning
1 tsp McCormick Grinders Black Pepper
1 tsp McCormick Grinders Sea Salt
Tips
When selecting your salmon filet ask the butcher to provide you with the thickest part of the filet. This will divide nicely into two even portions and allow both to cook evenly.
Directions
Note: Prepare Brown Rice per instructions. Take into account the cooking time so it is done at the same time as Salmon and Vegetables.
1. Cut salmon into two 4 oz portions
2. Rub the olive oil over both portions
3. Rub McCormick Salmon Rub on both salmon portions
4. Place salmon on foil lined shallow baking pan
5. Turn broiler to Hi setting
6. Place salmon in broiler for 5 mins
7. While salmon is broiling slice tomato, mushrooms, zucchini and onion
8. Combine mushrooms, zucchini and onion in a bowl
9. Add McCormick Perfect Pinch Vegetable Seasoning and toss vegetables to coat
10. Remove salmon from broiler and turn to cook opposite side
11. Arrange a thin layer of mixed vegetables on opposite side of baking pan away from the salmon. Place tomato slices on separate section of the baking pan to broil.
NOTE: A thin layer of vegetables ensures they are cooked evenly
12. Place in broiler for 5 mins
NOTE: All broilers are different. Adjust cooking time for your preference.
13. Remove from broiler and add McCormick Grinders Sea Salt and McCormick Grinders Black Pepper
14. Place salmon on bed of brown rice. Place broiled sliced tomatoes on one side of the salmon and the mixed vegetables on the other.
15. Serve with a lemon wedge
