Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 4 cloves crushed
    Celery, raw, .5 cup, diced
    Carrots, raw, 1 cup, chopped
    Ground Turkey, 1lb raw
    Lentils, 1 cup, rinsed
    Potato, 1 cup diced
    Chicken Broth, 4 cup (8 fl oz)
    Salt, 1 tsp
    Ground Cumin seed, 2 tsp
    Pepper, black, 1 tsp
    Kale, 2 cup, chopped



Tips

A couple of dashes of hot sauce adds a tasty bite.


Directions

Heat oil in large pot. Add onion and soften. Add garlic, carrots, celery until slightly softened. Add ground turkey and cook until it loses its pinkness. Add rinsed lentils and potatoes. Add stock and seasonings. Bring to boil then simmer for about 45 mins. Add kale and continue to simmer for 20 mins more.

Serving Size: makes about 4 2-cup servings
