Introduction

Ingredients

2 T light butter
2 C onion, chopped
Garlic (if from a jar 2 T, unless you really love the flavor, then use more, otherwise 6 cloves fresh)
1/4 t ground black pepper
1/4 t chili powder
any other spices desired (I usually use 1 T basil, and a dash of ground or cracked red pepper)
1 (15 oz) can Kidney Beans
1 (28 oz) can tomatoes
4 C water
1 C kidney beans, fresh, frozen, or canned
1 C peas, frozen or canned
Tips
you can add in 1/2 C chopped ham, chicken, or turkey breast, which will increase the calorie and fat count.
Directions
In a medium kettle, melt light butter over medium-high heat
Add onions and saute for 2 minutes
add garlic and cook for 2 minutes
add pepper, chili powder, and any other spices desired and cook for 1 minute (or however long it takes to open, drain, and rinse the kidney beans)
add kidney beans, tomatoes, and 4 C water
increase heat to high and bring to a boil
add green beans/peas
reduce heat and simmer until peas are cooked, and longer if desired.
Serving Size: makes 5 2-cup servings
