Ingredients

3 C warm water
1 Tbsp sugar
1 Tbsp yeast
3 C whole wheat flour
1/3 C canola oil
1/3 C honey
1 Tbsp distilled white vinegar
1 Tbsp lemon juice
1 Tbsp salt
1 Tbsp non-fat powdered milk
5 C whole wheat flour
Directions
- Gently mix warm water, sugar, & yeast with whisk; let proof for 5 min.
- Gently mix in 3 C wheat flour gently with whisk; let rise for 10 min.
- pour in canola oil & honey; stir slightly.
- mix together vinegar, lemon juice, salt, powdered milk; blend into dough mixture.
- mix for 1 minute with whisk on low.
- change whisk to dough hook.
- add remaining flour 1 cup at a time, until dough cleans itself from sides on bowl (may scrape bowl 1x with spatula).
- knead dough with dough hook on med/low for 10 min.
- lightly grease 2 - 8" bread pans and counter with non-stick spray.
- turn dough onto countertop.
- shape into 2 loaves; put into pans.
- cover with towel in slightly warm oven for 30 min.
- punch down, and re-form loaves.
- let rise covered in oven for 20-30 min.
- Bake in pre-heated oven @ 350 for 30 min.
- immediately remove from pans to cooling rack.
(makes ~34 single serving slices - 1/2" thick)
