Ingredients

    1 cups Bulgur
    1.5 cups boiling water
    1/3 cup olive oil
    1/2 lemon juice
    1 cup chopped green onion
    1 cup chopped fresh parsley
    4 tablespoon fresh mint
    1 cup Tomatos Fresh, Chopped
    1 Medium Cucumber Chopped
    1 teaspoon of salt

Directions

Combine bulgur and boiling water in a large boil. Cover and set aside to soak for 1 hour.

Add remaining ingredients and toss. Cover and refrigerate for at least 1 hour.
