Ingredients

1 pound Zucchini
1/2 cup Italian seasoned Panko breadcrumbs
1/2 cup grated Parmesan cheese
2 eggs
Tips
Make sure you serve these fresh out of the oven. They are not very good cold, and they do not reheat well.
Directions
Preheat oven to 425 degrees. Combine breadcrumbs and Parmesan cheese and set aside.Whisk 2 eggs in a shallow pie pan and set aside.
cut ends off of zucchini, and then cut in half so you have 2 stubby pieces. Set one piece on its end and cut it in half length wise. Cut that half in half, making 2 planks. Repeat with the remaining Zucchini. Stack 2 planks on top of each other and cut into strips. When all of the fries are cut, blot them with a paper towel.
Working with small handfuls dip zucchini sticks in egg, shaking gently to remove any excess, and then roll them in 2-3 tablespoons of breadcrumb mixture. Place coated strips in a single layer on a baking sheet lined with aluminum foil and sprayed with cooking spray. Bake for 10-12 minutes or until the zucchini is not soggy and the coating is golden brown and crispy. Serve immediately with ranch dressing or pizza sauce.
