Ingredients

1+ cup fresh, sliced mushrooms
1 small onion, diced
1 - 10oz. frozen chopped spinach, thawed and drained
4 eggs
1/3 cup milk
1/3 cup low-fat salad dressing
1 cup part-skim shredded mozzarella cheese
3/4 cup diced ham
1/4 cup grated parmesan cheese
1 - 9 inch prepared pie shell (purchased or homemade)
Tips
Serve with a green salad and whole grain bread.
Directions
Preheat oven to 375 degrees F
Saute mushrooms and onions in a large non-stick skillet sprayed with cooking spray on medium heat just until the onions soften and the mushrooms brown a bit. Remove from heat, stir in spinach and set aside to cool.
Beat eggs, milk and salad dressing in a medium bowl until well blended. Add spinach mixture, both cheeses and diced ham. Pour into prepared raw pie shell.
Bake 50-60 minutes or until center is set and top is golden brown.
