Ingredients

    2 cups sugar
    16oz Karo Light Corn Syrup
    1 stick of butter + butter for greasing
    16 floz of heavy whipping cream
    1 tsp vanilla

Tips

Be sure the pan is greased well so the caramel doesn't stick! You can put them in the freezer to set up quicker if necessary. You will need a larger pot than what you may think because the proteins in the milk make it froth a bit when boiling back to temperature. Use a really good thermometer that is accurate and precise!


Directions

Grease 9 x 13" pan with butter. Boil Sugar and Corn Syrup stirring occaisonally to 245F. Add butter and cream gradually without letting stop boiling. Stir constantly and bring temperature up to 242F as rapid as possible. Turn off heat stir in vanilla. Pour into greased 9"x13" pan. Cool. Cut into 1" pieces, wrap in wax paper.

Serving Size: makes approximately 117 1" pieces using a 9x13 pan.
