Introduction

Ingredients

    2 Tbsp chopped Garlic
    2 Tbsp olive oil
    1 box Swanson's fat free chicken broth
    4 cans Del Monte Stewed tomatoes (onions, celery, green pepper)
    dash of hot sauce, (optional)
    handfull of elbow maccaroni, (optional)

Tips

My kids love to add things to their soup. Pepperoini chunks, sheredded cheese, goldfish crackers and pretzels are just a few items that have been found floating in their bowls.


Directions

In large stock pot, Saute garlic in olive oil until lightly browned. Add chicken broth, stewed tomatoes, and hot sauce. Using an immersion blender, blend until desired smoothness. Cover and bring soup to a boil, and if desired, toss in a handfull of elbow maccaroni. Turn heat to low, and simmer 20 to 25 minutes, stirring often. This can also be made in a slow cooker. Just brown the garlic in a small sauce pan before mixing with the rest of the ingredients. Serve with cheese crackers, grilled cheese or nothing at all.
