Introduction

This stew goes way back to my grandmother. It is one of my absolute favorites. You can substitute turkey bacon too if you want to further cut the fat. This stew goes way back to my grandmother. Number of Servings: 1

Ingredients

    4 cups of sliced zucchini
    1 thin sliced medium onion
    4 strips of bacon cut into 1" peices
    1 large can of diced tomatos
    Garlic(fresh or powdered) to taste
    1 tbl Oregano
    Salt and pepper to taste
    Parmesean cheese

Directions

combine onion and bacon in medium size saucepan or dutch oven until soft cooked.
Drain
Add zucchini and Diced tomato and water to cover.
Add garlic, oregano, salt and pepper
Simmer until zucchini is soft and cooked through

Serving Size: Makes 4 servings
