Introduction

This is a chicken salad that's been smartened up a bit to be a little less fattening and a little more nutritious with still a great amount of flavor. Ingredients

    1 (15 oz) canned chicken, drained
    2 stalks celery, finely chopped
    1 Roma tomato (or small slicer tomato), seeded and diced
    1 avocado, peeled and cubed
    1/3 cup low fat sour cream
    1 tsp parsley, dried
    2 tbsp scallion, finely chopped
    1/2 tsp onion powder
    1/2 tsp garlic powder
    Dash Worcestershire
    Dash lemon juice
    8 slices whole wheat bread

Tips

Best if left to sit in the refrigerator for a while so the flavors get a chance to mingle. A couple hours to overnight should do. Also excellent with toasted bread for some added texture.


Directions

Drain chicken and flake with a fork in a large bowl. Toss remaining ingredients in and mix until consistent. Divide into four portions and serve each portion between two slices of bread.
