Ingredients

    1/4 cup red onion chopped
    1 large sweet potato, peeled and cubed- boil with salt until tender
    1 cup dry quinoa- cook to package directions, rinse and drain
    1/4 cup olive oil
    2 T balsamic vinegar
    1/2 a pomegranate, seeds removed
    1/4 cup chopped parsley or chives
    Salt and pepper to taste

Directions

Mix olive oil, vinegar together and toss with sweet potato, quinoa, and parsley. Add salt and pepper to taste. Top with pomegranate seeds. Serve warm or cold.
