Ingredients

zest of 2 lemons
zest of 2 oranges
3 garlic cloves, peeled and minced
6 tablespoons of minced fresh parsley
1 cup of grated parmesean
2 teaspoons of olive oil
salt and pepper to taste
2 eggs, stirred together
4 5oz skinless boneless chicken breast halves, pounded to 1/3 inch thickness
Directions
Preheat oven to 400 degrees Farenheit, and line a baking sheet with aluminum foil.
in a shallow bowl, combine the first 7 ingredients (herbs, zests, parmesan and oil)
Dip each chicken breast in the egg mixture, allowing excess to drip off and then dip in the citrus-parmesan mixture, pressing lightly to coat each side.
Place breasts on the baking sheet and transfer to oven
Bake for 20 minutes or until cooked
Serve with Lemon slices and a green salad.
