Ingredients

    8 oz Barilla Whole Grain Rotini
    2 T Extra Virgin Olive Oil
    2 T Garlic, minced
    1 C Fresh Mushrooms, mixed variety, chopped
    1 C Red Bell Pepper, sliced thin
    8 oz 41-50 Shrimp, raw
    1 lb Fresh Spinach
    1 oz White Wine
    Salt and Pepper to taste


Tips

Garnish with grated cheese if desired.
To add a little kick, mix in a teaspoon of hot pepper flakes with the garlic.


Directions

Cook pasta according to package directions.
In large skillet, heat oil.
Add garlic and cook until fragrent, about 2 minutes.
Add in pepper and cook about 2 minutes
Add in mushrooms and cook about 2 minutes
Add in shrimp and cook about 4 minutes
Add in spinach and cook until wilted and shrimp is pink
Add wine and cook an additional minute
Add in pasta, season with salt and pepper, toss well and serve.
