Ingredients

    -Garlic powder
    -1 medium head chopped cauliflower
    -1 cup chopped carrots
    -1/2 cup chopped green pepper
    -3/4 cup chopped zucchini
    -1/2 c chicken broth
    -1 1/2 c 2% milk
    -1 1/2 c water
    -6 T whole wheat flour
    -4 oz. marble cheddar cheese
    -salt, optional
    -pepper, optional
    -4 Keebler Club crackers, optional

Directions

In a large saucepan, combine vegetables and broth. Bring to boiling. Reduce heat; cover and simmer 12 to 15 minutes until veggies are tender.

In a medium bowl, stir together milk and flour; stir into mixture. Cook and stir over medium heat until thickened and bubbly. Remove from heat. In a food processor or blender, blend soup until partially pureed. Return to saucepan; add cheese and season to taste. Cook 2 to 3 minutes more or until cheese melts.

Serve with crackers or croutons

Serving Size: Makes 6 1 cup serving
