Ingredients

1 - pkg. of Hurst's HamBeens Cajun 15 Bean Soup mix
1 - large onion, chopped
1 - 14.5 oz can of diced or stewed tomatos (I used stewed with no salt added)
juice of 1 lemon
1-2 cloves of garlic, minced
(Optional) 1 - 2 lbs of regular or italian sausage
*this calculation is without sausage.

Tips
I saute the veggies separately from the sausage because the veggies cook quickly; the sausage takes longer.
For a one-dish meal, I add either green beans, peas or collards to the soup.
Directions
Place beans in a large pot, cover with 2 quarts of water and soak overnight, or a minimum of 8 hours.
After soaking, drain water and add another 2 quarts of water. Bring beans to a boil, reduce heat and simmer uncovered for 2 1/2 hours. In a skillet, saute the onion, garlic and sausage until sausage is browned. Drain excess grease and add contents to cooked beans along with tomatoes, lemon juice and cajun flavor packet. Simmer an additional 30 minutes. Salt and pepper to taste.
