Ingredients

4 cups water, rolling boil
2tbs butter
1.5 tsp salt
1/4 tsp sugar
3 cups short (pearl) rice
1/4 cup parmesan (optional)
8oz brick gouda, edam, or queso de papa
1/2 cup oil, for frying
Directions
Grind rice in blender, food processor, or spice grinder until it resembles coarse cornmeal.
Combine rice and parmesan, if using.
While slowly and steadily stirring, slowly pour in rice mixture. Keep stirring until mixture cools and becomes "doughy". Set aside.
Cut cheese into sticks 1/2" long by 1/4" thick.
Fill small bowl with water to moisten hands.
Form dough into fritters the shape of a small canoe. Put cheese stick in center. Completely cover over cheese with the rice mixture.
Freeze a few hours (for a crispier fritter).
Fry until golden.
Perfect snack with a cup of coffee or tea.
Serving Size: recipe makes 30 fritters, 1 serving = 3 fritters
