Ingredients

    1c Green pepper chopped
    1 sm onion, chopped
    1 stalk celery, chopped
    1 tsp oil
    1 c dry lentils
    1c unsweetened coconut milk (I used So Delicious brand - in the green carton)
    1c chicken broth
    1/2 c cooked diced chicken
    1/2 c (sm handful) cherry tomatoes
    1 c fresh spinach
    3 heaping tsp curry powder

Tips

Yes, I know curry powder is not authentic. If you have curry paste, you could likely sub and it would be AMAZING.


Directions

Heat the oil in the pot & add onion, celery & green pepper. Soften for 5 min. Add curry powder, coconut milk, broth & lentils. Bring to a low simmer for 40-60 minutes to soften the lentils. Add the chicken, cherry tomatoes and spinach. Cook 5 minutes more and serve.

Serving Size: makes 3 cups food, use 1 c serving if doing solo, 1/2 c servings if you have bread & a salad with it
